On 22 April, Bernardo João Madeira Fraga Gonçalves successfully defended his Master’s thesis in Chemical and Biochemical Engineering.
His thesis, entitled “Optimisation of the epimerisation reaction for the production of allulose”, was carried out at COPAM – Companhia Portuguesa de Amidos, S.A. under the supervision of Ms Inês Martins Oliveira (COPAM) and Professor Mário Eusébio (DQ). The aim of his work was to optimise the epimerisation reaction of fructose to D-allulose, using the enzyme D-psicose-3-epimerase, in order to determine the most favourable operating conditions for its production.
